Buffalo and Ranch Experiment

Ok, so I don’t always like just pepperoni on my Pizza. There are so many different kinds today, so I wanted to make a pizza with some of my favorite ingredients. I got this book last year called Grilled Pizzas and Piadinaa Iast year and it has pizzas made with anything you can think of. So you will be seeing more of these in the future. I know, I know, delivery in so much easier and in this case it probably would have been. I decided to use a Rachel Ray recipe for the Buffalo Chicken pizza and the book for the Ranch Chicken Pizza. Rachel Ray said 30 minutes, but when making two different pizzas with different ingredients, this definitely took longer than expected. Getting home from work at 7 and then making these, well lets just say my boyfriend waited patiently until I was done and low and behold we had pizza around 8. I would clock yourself at one hour, unless you are more experienced or were smart enough to cook your chicken and bacon the night before. You will absolutely see more pizza from me, but no I will not be opening a pizzeria any time soon.

Rachel Ray’s Buffalo Chicken Pizza
Ingredients
3/4 pound chicken breast cutlets
Extra-virgin olive oil, for drizzling
2 teaspoons grill seasoning, (recommended: McCormick Montreal Seasoning) eyeball it
1 pizza dough, store bought or from your favorite pizzeria
Cornmeal or flour, to handle dough
2 tablespoons butter
1 tablespoons Worcestershire sauce, eyeball it
2 to 3 tablespoons hot sauce, medium to spicy heat
1/2 cup tomato sauce
1 cup shredded Monterey Jack cheese, a few generous handfuls
1/2 cup blue cheese crumbles
3 scallions, thinly sliced

Directions:
Preheat oven to 425 degrees F. Preheat grill pan to high.

Place chicken on a plate and drizzle extra-virgin olive oil over the chicken then season with grill seasoning. When grill is hot, add chicken and cook about 3 minutes on each side. Stretch dough to form pizza using cornmeal or flour to help you handle it. If you let it rest and warm up a few minutes it will handle even easier. Set pizza on pizza pan to the side and clean board. In a medium skillet over medium heat, melt butter and stir in Worcestershire, hot sauce, and tomato sauce. Remove the chicken from grill and thinly slice it. Add chicken to sauce and coat. Cover the pizza dough with the saucy Buffalo chicken, cheeses, and scallions. Bake 18 minutes or until crisp

Ranch Pizza( via my book)
1 cup shredded moozarella
1 cup sharp cheddaer
1 red onion
1 small tomato
1/2 lb bacon crumbled
3/4 pound chicken breast cutlets
Ranch Dressing, as much as you like
1 pizza dough, store bought or from your favorite pizzeria

Directions:
Preheat oven to 425 degrees F. Preheat grill pan to high.
Cook your bacon and grill your chicken. Once finished cut your chicken into bite size pieces and crumble your bacon and set aside. Stretch dough to form pizza using cornmeal or flour to help you handle it. Put dough on pizza pan and Cover your pizza with chicken, bacon, onions, tomato and cheese. On top drop spoonfuls of Ranch Dressing ( as much as you like) and bake 18 minutes or until crisp.
